Healthy Appetizer: Superbowl Sunday Snack

Superbowl 50 Sunday Snack Healthy WeightlossNo matter who is playing in the big game, the Superbowl is always a reason to get together with friends and family, if only just to watch the great commercials! But with the party comes snack food, and game day snacks aren’t always the healthiest. If you’ve read any of our other posts, you know that we encourage you to stick to your diet even through holidays and special events such as this. A way to be sure you can eat something at the party without feeling guilty later is to bring your own snack or appetizer to share. Here is one of our favorites that you and your friends are sure to love!

Zucchini Bruschetta

Ingredients:
2 small zucchini, sliced into 1/4 inch circles
6 roma tomatoes, diced
1 garlic clove, minced
6 basil leaves, chopped
1 TBS olive oil
1 tsp balsamic vinegar
1/4 tsp salt
1/4 tsp pepper
1/4 cup parmesan cheese

Directions:
Preheat oven to 350 degrees. Mix together tomatoes, garlic, basil, oil, vinegar, salt, and pepper in a bowl. Spray a cookie sheet with cooking spray. Place zucchini slices on sheet and bake for 2 minutes. Flip slices and bake for another 2 minutes. Place a scoop of tomato mixture onto each zucchini slice and sprinkle parmesan cheese on top. Bake until cheese is slightly melted. Serve immediately.

*Chef tip: Be sure not to overcook the zucchini as it will get mushy instead of staying firm.
