CrockPot Cinnamon Chicken

Tis the season for family, twinkling lights and lots of food.  The holidays don’t have to be a time for backsliding into old eating habits or a time of overindulging.  You can enjoy evenings around the roaring fire with your family without feeling guilty about your caloric intake.  Be on the lookout for clean eating recipes this holiday season.  Chances are, some of your favorite holiday treats can be altered in healthy ways with a few key ingredients.

What’s more warm and cozy than a crockpot bursting with cinnamon spices?  The best part?  Those cinnamon spices aren’t breaking any rules.  In fact, this recipe is perfect for a nice, big dinner that’ll keep you from snacking on Christmas cookies and fudge all night long.  Try it out and enjoy it with the family you hold near and dear.

Crockpot Cinnamon Chicken

Ingredients:

  • Boneless chicken breasts
  • 1 tbsp. cinnamon
  • 1/4 tsp. cloves
  • 1/4 tsp. cardamom
  • 1 can (15oz) light coconut milk
  • 1 can (15oz) tomato sauce
  • 6 carrots, peeled and sliced

Instructions: 

  • Place the carrots in the bottom of the crockpot.
  • Top with the raw chicken breasts.
  • Pour in the rest of the ingredients.
  • Cook on low for 4-6 hours.  The chicken should be easily torn apart when it’s finished.
  • Serve with a fresh green salad or a baked potato.
