Healthy Christmas Appetizer: Mini Blue Cheese & Bacon Lettuce Wraps

30_lettuce_wrapsWhat’s your go-to recipe when your aunt asks you to bring an appetizer to Christmas dinner? Knowing you are trying to stick to a healthy diet, you don’t want to give in and bring those calorie-laden loaded potato skins, but you also don’t want to bring the typical veggie tray. Here is a recipe for a healthy appetizer that you can quickly make and take to any holiday party this year.

Mini Blue Cheese and Bacon Lettuce Wraps

Ingredients:
1 head of lettuce
4 Roma tomatoes
2 ripe avocados
8 slices of turkey bacon
1/2 cup blue cheese crumbles
32 toothpicks

Directions:
Get started by placing your turkey bacon on a broiler pan and cook in oven for 5 minutes, flipping after 2 minutes. Cut each piece of bacon in half. Separate and wash the leaves from the head of lettuce. Slice each tomato into 4 lengthwise pieces and set aside. Cut the avocados in half and slice each half into 4 lengthwise pieces. Lay out a piece of lettuce and add to it, 1/2 slice bacon, 1 slice tomato, 1 slice avocado, and a few crumbles of blue cheese. Roll into a wrap, place two toothpicks in wrap and slice the wrap into two pieces. *Chef Tip: use fancy toothpicks to make your dish look extra special!

Voila! You have mini appetizers that everyone will love and you won’t have to worry about searching for something healthy to snack on before dinner.
