Healthy Diet: Low Carb Mexican Beef + Zucchini Recipe

Low carb and low fat diets have been all the rage for the past few years.  But what does it really mean to cook meals with fewer carbs and less fat?  Is it a practical way to live life or will you be out at the grocery store every night searching for odd ingredients you forgot on your last trip?  We don’t think so.  Cooking light and healthy can be as simple as using the ingredients at your disposal.  We’ll prove it to you!  Try your hand at the recipe below:

Low Carb Mexican Beef + Zucchini

Ingredients:

  • 2 medium zucchini, quartered
  • 1 lb. lean ground beef
  • 2 garlic cloves, minced
  • 1 can (10 oz.) diced tomatoes
  • 1 tbsp. chili powder (You can adjust this depending on how spicy you like it. We recommend a little less for those who aren’t into spicy food!)
  • 1 tsp. cumin
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. onion powder
  • 1/4 tsp. red pepper flakes

Instructions:

  • Brown ground beef with garlic, salt and pepper on medium high heat in a large skillet.
  • Add tomatoes and remaining spices.
  • Cover and simmer on low for 10 minutes
  • Add zucchini.
  • Cover and cook for 10 more minutes
  • Serve with rice, guacamole and salsa.

Think of this as creating your taco seasoning with the spices you’ve got sitting in your spice cabinet. There’s less sodium and less carbs and you’re making it all from scratch.  We think the best part is how easy and fast you can create healthy dinners for your family!  Mix it up by creating burrito bowls or soft tacos and adding a few more topping choices.  You can even put the meat on a salad the next day for a healthy lunch on the go.

Remember that a healthy lifestyle doesn’t have to be a tricky one.  Eat your fill for dinner so that you won’t snack all night long and you’ll be even more satisfied!
